The DAK roastery presents a coffee that tastes like dessert in a cup – CREAM DONUT from Colombia will take you on a sweet journey full of chocolate milk (Nesquik), vanilla, and cherry-filled doughnuts. This select lot was created by combining two varieties – Caturra and Chiroso – and is processed using an advanced fermentation method with yeast. The result is a creamy, smooth, yet distinctly aromatic cup that evokes childhood joys in an adult setting. This coffee is definitely not ordinary – it is a delight for anyone looking for distinctive sweetness, fruity juiciness, and a sophisticated flavor profile.
The beans come from the El Encanto farm, located at an altitude of around 1,800 meters above sea level in southwestern Colombia. Farm owner Luis Anibal Calderón is one of the innovators in the region and in recent years has been focusing on new fermentation techniques and working with less common varieties. In collaboration with exporter Cata Export, he decided to take the processing process to the next level and create a lot that offers a unique taste experience. El Encanto is not just the name of the farm—it is a place where craftsmanship, the courage to try new things, and a deep respect for the soil and the story of each bean come together.
The processing of this coffee is based on fermentation with the addition of yeast, which is carefully selected to promote the development of sweet and fruity tones. This is known as yeast-inoculated natural, in which whole coffee cherries are fermented with a controlled yeast strain that determines the final flavor profile. After this controlled fermentation, the cherries are dried naturally on African beds, preserving the richness and complexity of the flavor. The combination of thoughtful fermentation, careful work with varieties, and precise drying results in a coffee that is fun, recognizable, and perfectly sweet—in short, Cream Donut.
