From the first sniff, this new product from the Boo! roastery will captivate you with its intense aroma of tropical fruits and flowers, which develops into juicy passion fruit and sweet pineapple on the palate. The fruity notes are lively and energetic, but without being overly wild. The whole profile is complemented by a delicately creamy, almost yogurt-like texture, which gives the coffee smoothness and harmony. White flowers bring lightness and airiness.

The coffee comes from the El Paraxaj farm, one of the historic farms of the Santa Felisa group, located on the slopes of the Acatenango volcano in the Chimaltenango region of Guatemala. Today, the farm is run by Anabella and Antonio Meneses, the fourth generation of producers who have significantly influenced the shape of specialty coffee in Guatemala. Anabella, an agronomist, ecologist, and Q-Grader, is behind the farm's fundamental transformation in recent years. She emphasizes precision in every step, as well as respect for nature and people and long-term sustainability. The farm operates under an agroforestry regime with up to 70% shade, which promotes biodiversity and the natural balance of the environment. The volcanic soil and altitude of 1,550–1,700 meters above sea level provide ideal conditions for slow ripening and a rich flavor profile.

The Sudan Rume variety, originally from the Boma region of Sudan, is now considered one of the rarest and most interesting varieties of all. The Meneses family decided to revive it alongside more famous varieties such as Pacamara and Gesha. This lot is processed using the natural method, which emphasizes its natural sweetness and fruitiness. Thanks to careful supervision of each stage of fermentation, the cup remains clean, clear, and balanced.
