This coffee comes from the hilly Shakiso area in the Guji region , in the south of the Ethiopian highlands, where coffee trees are grown at an altitude of over 2,000 meters above sea level. The Sawana station is located near Mount Kayon and is surrounded by a forest environment with rich volcanic soil and a stable climate, which give the coffee its characteristic depth. Local smallholders pick the cherries by hand and often carry them on foot along narrow paths from the surrounding villages. Guji is sometimes referred to as the younger and wilder sister of the famous Yirgacheffe, and this coffee beautifully demonstrates this, combining natural sweetness with the lively fruitiness and purity typical of Ethiopian specialties.
It owes its light body and pleasant floral notes to the washed method. In this processing method, the cherries are first carefully sorted by hand, fermented for 26 to 32 hours, and then thoroughly washed in clean water. This is followed by drying on raised African beds for 10 to 14 days, during which the beans are regularly turned to ensure even drying. This gentle process enhances the purity of flavor and delicate acidity, which blends beautifully with the floral and citrus notes typical of traditional Ethiopian Heirloom varieties .
