IDIDO from the Polish roastery Paloma Coffee Roastery is a naturally processed coffee from one of the most renowned coffee-growing regions in the world. In the cup, you’ll find notes of strawberry and peach, complemented by subtlehints of pearanddark grapes. The profile is fruity, sweet, and pleasantly balanced. At the artisanal Paloma roastery in Wrocław, IDIDO was roasted to best reveal its natural character, and it’s best prepared using a filter.
The coffee comes from the Idido area of the same name in Ethiopia’s Oromia region, near the town of Yirgacheffe. This area is world-renowned for coffee trees with floral aromas and fruity complexity. Yirgacheffe lies at higher altitudes with cool nights, rich fertile soil, and ample rainfall. These are the conditions that allow Ethiopian coffee trees to ripen slowly, enhancing the natural sweetness and fruitiness of the coffee cherries. Local Heirloom varieties have adapted to the environment over generations, and it is these varieties that are responsible for the fruity-floral character that has made Yirgacheffe famous around the world.
IDIDO underwent natural (unwashed) processing, in which the cherries are dried whole, including the skin and pulp. This process often takes longer than the washed method and gives the coffee its typical fruity sweetness and body. It is precisely thanks to the natural processing that you can enjoy the pleasantly strawberry and peach juiciness of the cup, which is made even more special by subtle notes of pear and dark grapes.
