TheColombian SUDAN RUME coffee from Paloma Coffee Roasters is a great example of a modern approach to specialty coffee. In the cup, it beautifully blends the sweetness of milk chocolate and caramel with elegant floral notes, a hint of rose, and a herbal character reminiscent of oolong tea. It is elegant, sweet, clean, and beautifully aromatic. The Sudan Rume variety is also known for its rarity and distinctive aroma, making it perfect for anyone who enjoys discovering something new in their coffee.

The Fincamigos farm was established with the goal of producing exceptional, exotic coffees while providing employment to people who previously worked in a local cooperative. The project was launched in 2018 and continues to have a positive impact on the region to this day. These specific beans come from altitudes between 1,740 and 1,950 meters above sea level in theLa Arboleda area of the Jardín region,Antioquia. Thanks to the mountainous environment, more stable temperatures, and slower ripening, the coffee acquires a clean, sweet, and complex character with a pleasant body.

The coffee underwent double fermentation and washed processing. First, it fermented for 36 hours as whole cherries, and then, after the pulp was removed, it underwent another dry fermentation for 36 hours. Finally, it was sun-dried on raised beds until it reached the ideal moisture content. This process enhances the clarity typical of washed coffees while adding depth, sweetness, and an interesting complexity, resulting in a cup that is elegant, aromatic, and beautifully balanced.
