The coffee comes from the Sul de Minas region, specifically from the Morada dos Pássaros farm in the town of Campestre. The 45-hectare farm is run by Wanderley Franco, who took it over as a third-generation grower and is now working with his son-in-law Flávio Bandeiras to move it towards specialty quality. They grow varieties such as Red and Yellow Catuaí, Mundo Novo and Yellow Catucaí, and this coffee is specifically from the Catuaí variety. Rich volcanic soil, an altitude of 1,120 meters above sea level and a long growing season create ideal conditions for growing sweet and aromatic coffee. Since 2016, the farm has been part of the Especialíssimo program, which, in collaboration with Cooxupé and SMC, provides access to education, technology, and better infrastructure—which is clearly reflected in the quality of their harvests.
The beans were processed using the natural method, where the cherries are dried whole, without removing the pulp. This gives the coffee a distinctive sweetness, full body, and juicy fruitiness. The process takes place directly on the farm on renovated drying terraces, where the coffee is dried naturally in the sun and carefully turned to maintain the uniformity and purity of the final profile. The result is a cup that retains maximum flavor, with a long, chocolatey-fruity aftertaste and a very pleasant texture.
