This Colombian coffee from the Swedish roaster Quo Coffee in Skärhamn is a filter coffee that comes across as juicy, subtly tannic, and very elegant. The flavor profile unfolds with notes of pineapple, panela, and orange blossoms,so the cup combines fruity freshness, a sweeter creamy base, and a slightly floral finish. Quo also notes an almost jam-like mouthfeel in this coffee and a character that reminds them of certain Kenyan lots, so the resulting profile feels lively yet very smooth and clean.
The coffee comes from Colombia, from the Palestina area in the Huilaregion, and is produced by Sandra Milena Mora and Hector Coy of Finca el Porvenir. Quo notes that they have been working with Sandra and Hector for ten years and that they have long appreciated the farm’s emphasis on quality and personal approach. Although they mainly grow Caturra and Tabi on the property , this lot is of thePink Bourbon/Rosadovariety and grows at an altitude of 1 , 900 meters above sea level. It is precisely the combination of high altitude, the producers’ experience, and the Huila terroir that gives this coffee its clean, juicy, and lightly structured character.
Processing is done using the washed method, which in this lot enhances the cup’s clarity, well-defined flavors, and elegant profile. The washed process allows the juiciness of pineapple, a subtle sweetness reminiscent of panelá, and a light floral note of orange blossom to fully shine through.
