The coffee comes from the San Agustín area in Colombia’s Huila region, where small farming families grow coffee at an altitude of around 1,750 meters above sea level. Local conditions are absolutely ideal for growing specialty coffee—high mountains, a stable climate, and rich soil give rise to complex and sweet profiles. San Agustín is also a place with a rich history and a strong connection between local communities and the surrounding nature. Thanks to the farmers’ collaboration and a modern approach to processing, the coffees produced here combine tradition, innovation, and exceptional quality in every cup.
The co-fermented honey processing method is what gives this coffee its completely unique character. Carefully selected Caturra and Colombia cherries were anaerobically fermented together with peaches and lactobacillus cultures, which gives the coffee intense fruitiness, creaminess, and pronounced sweetness. Fermentation took place in stainless steel bioreactors for 48 to 72 hours under controlled conditions. The subsequent drying process combines traditional patio drying and mechanical silo drying for maximum stability and purity of flavor.
