This is gradually joined by the delicate scent of rose water, which lends the coffee a light floral character and unusual elegance. This coffee comes from the Capilla del Rosario farm in the Antioquia region of Colombia. The farm spans approximately 45 hectares at an elevation of 1,560 to 2,000 meters above sea level and is run by farmer José David Posada, a fourth-generation coffee grower. Posada combines family tradition with a modern approach to coffee cultivation and processing. Thanks to his background in gastronomy, business, and education, he focuses not only on production quality but also on innovation and the development of coffee culture in the Antioquia region. The farm grows both traditional Colombian varieties and newer hybrids and also serves as a space for experimentation and research into new processing methods.
This coffee is processed using the washed method with experimental co-fermentation. After the ripe cherries are hand-harvested, the beans are pulped and fermented in a solution created from a culture of bacteria and yeast, particularly Lactobacillus and other microorganisms that have been cultivated from coffee cherries over a long period. Lychee extract and citric acid are also added to the fermentation environment, helping to create specific conditions for flavor development. After fermentation, the coffee is thoroughly washed and then sun-dried until it reaches a stable moisture content.
