Sweet, juicy, and incredibly playful—Costa Rica Don Sabino from The Naughty Dogroastery is a coffee that will captivate your nose as soon as it is ground. The flavor beautifully combines notes of raspberry candy, juicy watermelon, and delicate nougat, with a pleasant medium acidity dominating the whole composition, allowing the fruit to stand out without overpowering the natural sweetness. This Geisha from central Costa Rica is fresh and elegant, yet accessible—the ideal choice for lovers of fruity filter coffees who are looking for purity and depth. When properly prepared, it surprises with its juiciness and delicate aftertaste that lingers on the tongue long after you've finished drinking.
Behind this microlot is Don Sabino Micromill, a family project in the Alajuela – Central Valley – Fraijanes area, where farming tradition is combined with a modern, precise approach to processing select coffee. At the Finca El Llamarón farm, located at an altitude of 1300-1600 m above sea level, cultivation is considered a craft that requires the utmost attention - from the harvesting of ripe cherries to their careful drying. The region has an ideal microclimate: warm days, cool nights, and rich volcanic soils. As a result, the Geisha variety is characterized by a distinctive aroma and a clean taste that beautifully captures the character of the local environment.
The coffee has undergone dry processing (natural), which is typical for the farm and which best highlights the fruity character of this Geisha. Ripe coffee cherries are dried whole in the sun, regularly turned and checked to ensure that fermentation proceeds slowly and evenly. This process brings a lot of sweetness to the final cup, highlighting the flavors of candy fruit and giving the coffee a velvety body. The natural method works great here - it allows both the varietal complexity and the terroir of central Costa Rica to shine through, making the cup unexpectedly juicy, clean, and exceptionally aromatic.
