The beans come from the renowned Colombian farm Las Flores, which is run with great passion by farmer Jhoan Vergara in the Huila region (Pitalito area). Red Bourbon coffee trees grow here at an impressive altitude of 1,700–1,790 meters above sea level. In these cooler high-altitude conditions, the cherries have plenty of time to ripen slowly. And it is precisely this patience of nature that is reflected in the resulting bean. As a result, the coffee has acquired its natural sweetness, a brilliant, lively acidity, and that incredibly elegant floral-fruity profile that makes this fall 2025 harvest such a unique experience.
To allow this delicate and fragrant profile to shine in all its glory, Jhoan Vergara opted for the traditional washed method. Immediately after being hand-picked, the coffee cherries were stripped of their skins and pulp, and the beans were then subjected to a thorough water bath. This process removed all residual sugars from the pulp, ensuring the coffee had a crystal-clear body without any wild or fermented notes. The beans were then dried on raised African beds, where their moisture content stabilized through constant turning. At the roastery, the beans were roasted precisely to allow that amazing flavor to fully blossom in the cup.
