Dutch roaster DAK Coffee Roasters is rolling out another Colombian blend, this time called Colombia HIP HOP. This washed beauty for filter brewing combines sweet raspberries with the floral freshness of roses. Like other iconic coffees from DAKU, such as COCO BONGO and PALOMA, this coffee also comes from the Huila region of Colombia. Colombia HIP HOP is the result of farmer Marlon Arnulfo Rojas, with whom DAK is working for the first time. Marlon's farm, La Reserva, is located at an altitude of 1,650 to 1,750 meters above sea level and grows varieties such as Bourbon, Sidra, Gesha, and Pacamara. Marlon is also a certified coffee taster and won the national cupping championship in Colombia in 2024, earning him the opportunity to represent his country at the world championships. The farm uses innovative processing methods that highlight the complex flavor profiles of their coffees, which are known for their purity and distinctiveness. Marlon represents a combination of tradition and innovation in the Colombian coffee industry and contributes to the international recognition of coffee from Huila.
It is the washed method that gives this coffee its lightness and freshness, with distinctive fruity and floral notes. The process begins with the hand-picking of ripe cherries, which are then destemmed and placed in water tanks where they ferment for 12 to 48 hours. After fermentation, the coffee beans are thoroughly washed with water and then dried on raised African beds. The resulting coffee often has a clean, bright flavor profile with higher acidity, subtle sweetness, and remarkable complexity.
