The coffee grows at an altitude of 1,900 meters above sea level, which, together with the region's unique climate and rich soil, contributes to its exceptional quality. This Typica Mejorado variety has undergone a unique 72-hour natural oxidation process. The whole coffee cherries are immersed in water using a special recirculation system that ensures thorough mixing of soluble substances such as sugars, acids, and aromatic precursors (substances that transform into unique and intense aromas during the roasting process). This controlled oxidation process not only softens the pulp, but also increases the complexity of the resulting flavor profile by oxidizing polyphenols (natural antioxidants found in fruit pulp that contribute to the richness and complexity of coffee) and other substances contained in the fruit pulp.
