BirdSong’sColombia Atunkaa is exactly the kind of coffee that reminds you right from the start that “decaf” doesn’t have to mean compromise—but rather a new realm of delicacy, sweetness, and nuance. The first sip envelops you in a soft, warm sweetness reminiscent of panelu —not sharp, not excessive, but deep and natural, like cane sugar slowly melting. Into this, a juicy fresh orange note subtly creeps in, lightly brightening the coffee and giving it a sparkle. It’s not acidity that dominates, but rather a gentle flash of freshness that keeps the entire cup lively and interesting. And then come the soft, ripe notes of dried figs, slightly honeyed, slightly fruity, with a pleasantly long, calm finish. The texture is beautifully smooth, almost creamy, and the overall impression is almost soothing. It is a coffee that does not overwhelm, but rather draws you in slowly, layer by layer. Every subsequent sip reveals subtle nuances—sometimes more sweetness, other times a delicate citrus note, and then again that pleasant, dried-fruit depth. 

Behind this coffee is the Colombian company Siruma, which approaches coffee in a completely different way than the classic export model. Instead of anonymous lots, they focus on specific people, communities, and long-term relationships. They work directly with farmers in regions such as Cauca, Caldas, and Tolima and prioritize transparency at every step, from harvest to the final cup. The name Atunkaa comes from the Wayuu language and means “sleep and a dreamy dream,” which is not just a poetic detail but a fairly accurate metaphor for what unfolds in the cup. This coffee possesses a sense of calm, softness, and a subtle depth that gradually unfolds. Combined with the fact that it is a decaffeinated variety, this “dreamy” character takes on even greater meaning. 

The decaffeination process for Colombia Atunkaa is precisely the moment that shatters the notion that “decaf = no flavor.” A gentle sugarcane method is used here, in which caffeine is removed using natural ethyl acetate derived from sugarcane—no harsh chemicals, just a natural process that works in harmony with the coffee’s own flavor. The beans are first gently opened with steam to prepare their structure for extraction, and then immersed in a solution that selectively binds the caffeine without disrupting the aromatic compounds. Decaffeination here is not an intervention, but rather a quiet adjustment in the background that allows the coffee to remain true to itself, yet without caffeine. The ideal choice for moments when you want a flavor experience without the stimulation, yet don’t want to miss out on anything that makes specialty coffee special.
