This Ugandan coffee from BirdSong Coffee captivates with its full-bodied, juicy, and naturally balanced profile. The coffee comes from the Mt. Elgon region in the eastern part of the country, where the terroir—with its higher elevation and stable climate—creates ideal conditions for Arabica. The lot is named after the village of Zebigi, which lies atop a table mountain above the processing station. A total of 307 smallholder farmers were involved in the production of this coffee, with each contributing an average of approximately 165 kg of freshly harvested cherries to this micro-lot. The coffee grows at an altitude of 1,800–2,200 meters above sea level.
Processing is carried out using the dry fermentationmethod—after harvesting, the cherries are pulped, then undergo a 40-hour dry fermentation, which is concluded with a thorough washing in cold mountain spring water. The coffee is then dried on African drying beds in solar drying houses, which helps achieve a fuller flavor profile than that of typical washed coffees from this region. The Nyasaland, SL14, and SL28 varieties, characteristic of Uganda, combined with the dry fermentation process, create an exceptional, delicate, and sweet flavor profile that is truly one of a kind.
