The Honduras May Edition from BirdSong Coffee has a calm, gentle, and naturally balanced profile, without the need to draw attention to itself with boldness. The flavor opens with a velvety chocolate cream that creates a smooth and rounded base, upon which other layers gradually unfold. A subtle sweetness reminiscent of blackberry jam comes through as a quiet fruity accent rather than a dominant element, lending the cup a delicate juiciness and lightness. The coffee’s texture is soft, almost creamy, with a pleasant fullness that lingers on the palate long after the last sip. The aftertaste is calm, sweet, and clean, without any distracting bitter notes, instead featuring a finish of cocoa and ripe fruit.

The coffee comes from the Santa Ana area in the La Paz region of Honduras, where it is grown at higher altitudes around 1,850 meters. It is precisely this environment, together with the rich vegetation and natural shade, that creates ideal conditions for the slow ripening of coffee cherries, thanks to which the beans retain more sweetness and complexity. Behind this coffee is farmer Fabio Caballero Jr. from the La Selvaje farm, where coffee cultivation has a long family tradition. The farm is situated in a landscape with high biodiversity and an emphasis on a sustainable approach to nature, which is reflected not only in the quality of the coffee itself but also in its overall character. The Catuai variety used is known for its reliability and ability to create balanced, sweet, and clean flavor profiles. The entire origin is reflected in the cup subtly yet distinctly, manifesting as a delicate sweetness, roundness, and a calm, stable character.

The Supernatural processing method lies somewhere between the classic natural process and more modern fermentation techniques. The cherries are harvested at peak ripeness and then dried whole, slowly and under careful supervision, to preserve as much of their natural sweetness as possible. It is precisely this processing method that gives the coffee a fuller body and subtly highlights the fruity and chocolate notes. Drying takes place gradually, with an emphasis on evenness and stability, which helps maintain a clean and balanced flavor profile. Overall, this is a coffee built on balance and natural sweetness. It isn’t flashy, but that is precisely where its strength lies. It performs reliably and pleasantly in every situation.
