Meet the exceptional coffee that will captivate you with the first sip – a special Geisha from Colombia by Father’s Coffee Roastery. This exclusive variety offers a complex flavor experience full of delicate notes of mandarin jam, dried apricots, and elderflower. It is renowned not only for its prestige but primarily for its excellent quality and floral profile.
The coffee comes from the La Victoria farm, owned by Aristobulo Rayo Mendez, a member of the Cafe Agrario association. This association brings together 35 farmers from the Ortega area and focuses on supporting local producers of specialty coffee. Despite historical difficulties such as civil war and problems with unpaid customers, the farmers continuously strive to add value to their production through export, local roasting, and direct sales. The coffee plants grow here at an altitude of 1830 m above sea level on an eight-hectare plantation surrounded by ten hectares of protected natural forest. These conditions – a combination of high altitude, fertile soils, and the shade of native forests – are ideal for the development of the Geisha variety.
This lot was processed using the washing method, known for its ability to highlight the purity and clarity of the flavor profile of the beans. After manual harvesting, the coffee cherries were mechanically depulped to remove the skin and part of the pulp using a depulper. Fermentation then took place in water tanks for 12 to 48 hours. During this process, enzymes naturally removed the remaining pulp. The beans were then thoroughly washed and dried for several days on raised beds to ensure even drying and maintain the maximum flavor potential. This careful process emphasizes the fruity notes and gives the coffee a clean and harmonious flavor profile that will be loved by all specialty coffee enthusiasts.
