The Sana'a region is not only a leader in Yemeni specialty coffee production, but also a place with ideal growing conditions - the different altitudes, fertile soil, favourable microclimate and ample rainfall create a unique environment. The capital of Yemen, Sana'a, is known for its coffee culture, where traditional methods such as the preparation of Ibrik coffee over hot charcoal are honoured. Although Yemen offers fantastic climatic conditions, the extremely high altitude prevents the necessary infrastructure for coffee processing. As a result, farmers have to carry coffee cherries several kilometres to processing facilities. The Hayma Dakhiliya community is most famous in the area for producing high quality coffee, despite the harsh conditions, limited access to water and isolation of mountain villages such as Al Yair. This coffee is the result of the tireless work of several hundred farming families who have been instrumental in preserving this historical legacy.

The natural method is often used in water-scarce areas, particularly in Africa and in arid regions of Latin America, such as Brazil. In dry processing, the cherries are spread out on concrete surfaces or beds and dried in the sun or using dryers. The coffee is turned regularly to prevent mould and unwanted fermentation. Once drying is complete, the skin is mechanically removed in a 'dry mill'. Dry processing adds characteristic flavour elements to the coffee that do not depend on the variety or terroir. Properly done, drying brings fruity notes and a creamy body to the cup.
