Uganda Butawa from Šťáva Roastery is a bold and complex espresso that captivates with its combination of sweet and fruity notes. In the cup, the sweetness of vanilla and cola nut blends with juicy stone fruits. A fuller body and balanced acidity give the coffee a pleasantly rounded character.
The coffee comes from the rugged Mount Elgon range in Uganda, where coffee trees thrive at altitudes of up to 2,200 meters. The local microclimate, with its cooler nights, slows the ripening of the cherries, resulting in denser beans and a more concentrated flavor. This micro-lot is produced as part of the sustainable project The Coffee Gardens, which works closely with local smallholder farmers and is committed to transparent purchase prices and improving the community’s living conditions. Falcon Specialty, a key partner in providing long-term support to farmers in this region, ensures reliable and ethical importation.
After careful hand-picking, the coffee underwent the washed process. The ripe cherries were first de-pulped and then fermented under controlled conditions in water baths. After fermentation, the beans underwent thorough washing combined with flotation, which reliably separated out the lower-quality, lighter beans. Drying took place gradually on elevated African drying beds, ensuring optimal air circulation. It is precisely this meticulous washed processing that highlights the crystal-clear purity and flavor complexity of this lot.
