From the foothills of Adršpach, we received beans from a roastery with the wonderfully juicy name Šťáva. You’ll immediately taste the freshness of mandarins, beautifully rounded out by the sweet flavors of caramel and almonds. In short, it’s a wonderfully balanced cup with a clean profile and a subtle citrus acidity. The beans are roasted for espresso, so if you prefer a fresher, slightly more acidic cup of espresso in the morning, this is the right choice for you.

The coffee comes from the Diamante area in the San José de Lourdes region of Peru. The Chilcon family tends to the coffee trees, and their farms are located at an elevation of around 1,900 to 2, 000 meters, which creates ideal conditions for the slow ripening of coffee cherries and the development of their flavor. The family has been growing coffee for several generations. It is precisely this long-standing experience, meticulous work, and emphasis on quality that define the character of this lot. The coffee cherries ripen here in challenging mountain conditions, which certainly don’t make life easy for the coffee trees.

The lot was processed using the washed method, which beautifully highlights its clean and elegant character. During harvest, only ripe coffee cherries are carefully selected and then quickly processed. Roger Chilcon coordinates the entire process from harvest to drying, ensuring he maintains control over the coffee’s quality at all times. It is precisely this careful selection of cherries and emphasis on rapid processing that help preserve the purity of the flavors, pleasant sweetness, and fresh fruitiness. Falcon Coffee then distributes this coffee worldwide.
