Šťáva Roastery is a specialty coffee roastery based in Zdoňov near Adršpach. Their roastery is located in the Adršpach Rocks region, and it is precisely this local setting that is one of the things that makes Šťáva, well, Šťáva. After all, their motto —“Šťáva, coffee from the Adršpach region”— says it quite well.

Behind Šťáva are Standa and Gábi. Seven years ago, Gábi gave Standa a book on coffee roasting for his birthday. At the time, roasting wasn’t just another hobby for him— it was his big dream, which he gradually began to make a reality. Their first steps came at their former espresso bar, Zašívárna, in Prague’s Nusle district, where they used a small ROEST L100 sample roaster to learn everything there is to know about coffee during the roasting process. Since then, they’ve managed to run several coffee shops and eventually made it to their own roastery in Zdoňov. So even though, in their own words, it wasn’t exactly a rocket-fast progression, after seven years they now have their own bags of coffee, and their dream has become a reality.

Today, they roast on a Diedrich DR12 connected to pure propane. The roaster’s airflow and local conditions also play a major role for them. The air flowing into the machine is influenced by the cool environment of the Adršpach Rocks. During roasting, they carefully monitor the coffee and seek out the flavor profile that best suits each bean. Roaster Matěj is in charge of consistency; according to Šťáva, he can produce identical roast curves one after another. They source their green coffee from the British importer Falcon Specialty, and their goal is to get the most out of every coffee and preserve its character in the cup.

And now comes the moment they’ve been preparing for all this time. Šťáva Roastery is just getting started in earnest and is introducing its first line of specialty coffees. Along with it comes a completely new visual style, created for Šťáva by designer Ferdinand Kacler. From the packaging to the brand’s overall identity, Šťáva is taking on a look all its own. Seven years after their first book on coffee roasting, Standa and Gábi’s dream has finally come true!
