In your cup, this Geisha from the Ostrava-based roastery Father's Coffee will surprise you above all with its delicacy and elegance. First, a juicy note of blackcurrant unfolds. Gradually, the floral elegance of linden blossom joins in, lending the coffee an airy lightness and smoothness. In the finish, everything comes together to form a smooth hazelnut cream. The flavor is distinct, layered, and yet perfectly balanced.
The coffee comes from northern Peru, from the Las Pirias area in the Chirinos region, which is among the country’s most respected coffee-growing areas. The producer is Eli Espinoza —a farmer who literally worked his way up in the coffee industry. He came to the mountains as a teenager with no land, worked as a picker on other people’s farms, and gradually earned enough to buy his own land and a house. Today, he cultivates four hectares of coffee trees at altitudes of 1,850–2,000 meters, where the mountain climate and slow ripening give the beans depth and elegance. In a region where local cooperatives promote quality and fair compensation for farmers’ work, Eli is one of those who demonstrate how determination and patience can transform both life and the flavor in the cup.
Processing is done using the washed method, which highlights the character of both the location and the variety. After harvest, the cherries pass through a water bath where unripe fruits are separated; the pulp is then removed and the beans are thoroughly washed. Drying is slow and careful—first one day in the shade, then approximately 35 days in a solar drying tent. The Geisha variety, originally from Ethiopia, is known for its floral aroma and delicate texture; at high altitudes, it has enough coolness and time to develop its complexity. The result is a coffee that offers elegance, clarity, and a unique experience.
