Behind this coffee are sisters Ana Alvir and Martha Alvir, founders of Cafetos de Segovia. After the civil war in Nicaragua, they settled abroad, but eventually returned to their native region of Nueva Segovia, where they took over the family farms Bethania and Hortensias. Their goal was to give local growers better economic opportunities while preserving the cultural and natural heritage of the region. Today, the farm employs dozens of people, operates under an agroforestry regime, and its coffees regularly succeed in the Cup of Excellence, where the region is among the highest rated in the country.
The Maracaturra variety (a hybrid of Maragogype × Caturra) is known for its huge beans and , at an altitude of around 1,500 meters above sea level, provides a complex flavor profile with bright acidity and lively floral and tropical notes. Anaerobic natural processing enhances sweetness and juiciness, as the coffee cherries ferment without oxygen and are then dried whole with the pulp.
