Honduras SAGASTUME from La Cabra Coffee offers a fresh and exceptionally well-balanced cup with notes of citrus, red currant, and caramel. From the very first sip, it captivates with a pleasant fruity liveliness, which is gradually complemented by a more pronounced sweetness and a long caramel aftertaste. Behind this coffee is the Sagastume family from the Santa Barbara region of Honduras, with whom La Cabra has been collaborating for five years. The family has been growing coffee in this area for over 100 years and is among the producers who helped build Santa Barbara’s reputation as one of the most interesting coffee regions in Honduras. This specific lot comes from a plot managed by Yeltsin Sagastum. La Cabra has long been impressed not only by the quality of their coffee but also by their meticulous approach to cultivation and processing, which ensures that each harvest maintains a high standard year after year.
This Parainema lot was processed using the washed method, which helps preserve the distinct character of individual flavors. After the April 2025 harvest, the cherries were pulped, fermented for 20 hours, and then washed. The coffee was then dried for 14 days on raised beds under solar drying tunnels. To preserve maximum freshness, the ground coffee is packaged in individual Steeped Coffee nitrogen-flushed bags, which help retain the aroma and character of freshly ground coffee for a long time. Simply pour hot water over it and enjoy premium coffee without any complicated preparation.
