Rwanda SHYIRA ANAEROBIC 48h from La Cabra Coffee offers a more distinctive and unconventional flavor profile than is typical for Rwandan coffees. The cup reveals notes of violets, fruit jam, and citrus, which together create the sweet, fruity, and unmistakable character of this coffee. The most prominent feature is a juicy fruitiness reminiscent of ripe berries and homemade jam, complemented by a delicate floral aroma. Nevertheless, the coffee retains a pleasant citrus freshness that beautifully enlivens the entire profile. This lot is also available in Steeped Coffee pouches, allowing you to easily prepare specialty coffee anywhere without the need for additional equipment.
The coffee comes from the Shyira processing station in Rwanda’s Nyabihu district, one of the highest-altitude processing stations in the country. It is located in a mountainous region near Volcanoes National Park, where coffee trees grow at high altitudes and ripen more slowly than in lower-lying areas. It is precisely these local conditions that help create the distinctive flavor profile and fresh acidity for which Shyira coffees are known. In addition, this lot underwent anaerobic fermentation, which gave the resulting cup greater flavor intensity without masking the typical freshness of Rwandan coffees.
After harvest, the cherries were fermented for 48 hours in an anaerobic environment under tightly sealed plastic wrap. Water placed on the film created a seal that allowed oxygen to escape but prevented it from returning. After fermentation was complete, the cherries were cooled, spread out in the sun, and then dried for approximately 35 days. Thanks to this carefully controlled process , the coffee gained a more pronounced sweetness, deeper fruity notes, and a richer aroma. To preserve maximum freshness, the ground coffee is packaged in individual Steeped Coffee nitrogen-flushed bags, which helpretain the aroma and character of freshly ground coffee for a long time. Simply pour hot water over it and enjoy premium coffee without any complicated preparation.
