This lot comes from Colombia, from the El Turpial farm of producer Emerson Felipe Narváez in the mountainous region of Nariño. La Cabra notes that this coffee comes from Emerson’s Geisha plots planted at an altitude of over 2,200 meters above sea level—nearly at the limit of what is possible under local conditions. It is precisely this extreme location and the meticulous work on the farm that give rise to a coffee with an exceptionally delicate yet complex aroma. The Geisha here comes across as clean, floral, and elegant.
Processing is done using the washed method, but in a very careful and extended regimen. After harvest, the cherries ferment for three days in closed bags; after hulling, another two days of fermentation follow, and only then is the coffee washed and dried on raised beds.
