The coffee comes from the Sierra Morena farm in Colombia’s Huila region, where it is produced by Wilson Alba and his family. This lot, labeled “End of Season,” comes from the final harvests of the season, when the longer ripening of the cherries often yields greater sweetness and a more pronounced fruity character. Processing is done using the washed method, which highlights the clarity and transparency of the resulting cup. After hand-picking, the cherries are carefully sorted, hulled, and fermented before being washed with clean water.
