The beans come from Colombia, specifically the Nariño region, from the Finca Las Delicias farm. The producer is Jesus Angel Lopez, who has been working on the farm for 14 years alongside his father, continuing a family tradition spanning three generations. The farm specializes exclusively in washed coffees, which is reflected in the clarity and distinctiveness of the resulting cup. The variety grown is Gesha, known for its elegance, aroma, and ability to convey the terroir very clearly in the flavor.
Processing is carried out using the classic washed method. After harvesting, only ripe cherries are selected, which are then sorted by density, pulped, and fermented in tanks for 24 hours. The coffee is then washed and dried for 15 to 20 days to achieve ideal moisture content and stability. This process preserves the purity of the flavors while highlighting the subtle nuances of fruit and tea notes that are characteristic of this lot.
