This Ethiopia Strawberry Jelly from DAK Coffee Roasters is like the little sister of the legendary Strawberry Kiss lot – just as playful, but a little more intense. The cup is dominated by strawberry jam, fresh mandarin, and sweet cherries, which together create the impression of a jam-sweet, juicy filter coffee. The profile is distinctive but balanced – beautifully jammy, round, and dessert-like, ideal for anyone who likes to enjoy a more pronounced fruitiness and sweetness in their filter coffee.
The coffee comes from the Rumu Damo washing station, which works with local smallholders in one of the highest coffee-growing areas in Ethiopia. The coffee trees here grow at an altitude of around 2300 m above sea level, which is reflected in their slow ripening and high complexity. This lot includes local Ethiopian landraces – native varieties that give the coffee its typical floral-fruity aroma and juicy character, so characteristic of modern Ethiopian naturals.
Anaerobic Natural processing takes this lot one step further. Carefully sorted ripe cherries undergo extended anaerobic fermentation in a closed environment, which deepens the sweetness, intensity, and "jammy" character of the flavor. The coffee is then dried in whole cherries on raised beds, where it is regularly turned and checked. The result is a cup that combines the typical purity of Ethiopian coffee with a distinctive, sweet fruitiness and creamy texture that you will really enjoy on a filter.
