The Anaerobic Ethiopia Shoodhisa from the Dutch roastery Manhattan Coffee Roasters is a truly juicy, fruity explosion. This coffee boasts a flavor profile of fresh blueberries and tart orange, balanced by the sweetness of Fruittella strawberry candies. The coffee was produced by “King of Guji” Ture Waji as part of the Sookoo Coffee project, which he founded with his brother Assefa in 2018. Since its inception, the company has been a major processor in the Guji region, specifically in the Odo Shakiso area. The beans are sourced from nearby farms, and the company strives to reflect the uniqueness of each lot it processes. This coffee comes from the Shoodhisa kebele and consists of the Gibirinna 74110 and Serto 74112 varieties, grown for their resistance to coffee rust.
The anaerobic natural processing method gives the coffee a uniquely juicy and sweet flavor. After being hand-picked at the ideal point of ripeness, the coffee cherries are carefully sorted to remove damaged and unhealthy ones. They are then placed in plastic barrels, where they undergo anaerobic fermentation for 48 hours. The cherries are then dried on elevated African drying beds for 15 to 20 days until they reach the ideal moisture content.
