This coffee comes from the Bura Baturo processing station, located in the Sidamo region of Ethiopia. What sets it apart is its high elevation, reaching up to 2,440 meters above sea level. It is this elevation that influences both the unusually small size of the resulting coffee beans and their high density. The station primarily produces coffees processed using the dry method and the anaerobic natural method, which are characterized by their fruitiness, sweetness, and fuller body.
The Anaerobic Natural processing method is responsible for the coffee’s sweet flavor profile. After harvesting, the coffee cherries are sorted, and damaged, unripe, or overripe cherries are removed. They are then fermented for several days at a constant temperature in tanks without oxygen. In the final step, the cherries are dried on raised African drying beds while being turned regularly.
