If there is a coffee that can change your perspective on what’s possible in a cup, it’s this Geisha from Finca Deborah. With a breathtaking cupping score of 92.5 points, we’re in the realm of coffees that only appear on the final stages of world barista championships. The first sip is absolutely electrifying. You’ll sense an explosion of cotton candy, whose airy sweetness immediately blends with sparkling notes of orange and the complex flavor of fresh coffee cherries. The aroma is downright intoxicating, with dominant notes of apricots and raspberries, while the aftertaste brings deep, noble notes of blueberries and dark grapes. The body is light, incredibly juicy, and silky.

This lot comes from one of the world’s most famous coffee farms, Finca Deborah, led by visionary Jamison Savage. The farm is located at an extreme altitude of 1,950 meters above sea level in Panama’s Volcán region (Chiriquí). This altitude is absolutely crucial for the Geisha (Green Tip) variety; thanks to the lower temperatures, the cherries ripen very slowly, allowing the beans to absorb an unprecedented amount of sugars and aromatic compounds. Jamison’s approach is defined by three words: creativity, discipline, and consistency. Every tree on the farm receives absolute attention, and the result is a raw material that fascinates experts around the world.

The unique character of this lot is due to a specific processing method known as NX (Extended, Shade-Dried Natural). The cherries first underwent extended fermentation, which deepened their fruity complexity, and were then dried in the shade on elevated African beds. This slow and controlled drying, which continues until the beans reach exactly 11% moisture content, is extremely demanding in terms of precision, but absolutely essential for the resulting flavor. It is precisely thanks to the shade and the long drying time that the Geisha retains its delicate floral notes, while the "extended" fermentation gives it that incredible depth and "body" in the aftertaste. Each bean was then roasted by Coffea Circulor to preserve its purity and synergistic balance. It represents the technological pinnacle of production, unfolding an incredible spectrum of flavors in the cup that you simply won’t find in other coffees.
