The coffee comes from the Gedeb area on the southern edge of the well-known Ethiopian Yirgacheffe region. Processing takes place at the Lalesa station, which is part of a local coffee community renowned for its distinctly fruity, floral, and vibrant natural coffees. Lalesa is owned by Ephtah Specialty Coffee, an Ethiopian exporter founded and led by women, headed by Wubit Bekele. Ephtah collaborates with growers and processing stations across Ethiopia and, in addition to quality, focuses on developing local communities and creating more opportunities for women in the coffee industry.
The variety is Ethiopian Landrace, a local Ethiopian population of coffee trees with great genetic diversity, which often results in pronounced fruity and floral notes and a complex aroma. The processing method is dry, or natural. Ripe cherries are first carefully sorted and then spread out on covered drying beds. Roofs resembling greenhouses protect the cherries from direct sunlight and slow the drying process to approximately 20 to 25 days. Throughout this period, the coffee is regularly turned and checked to ensure it dries evenly. The slower natural processing enhances the pronounced fruity sweetness while also helping to preserve the clarity of the cup.
