That’s exactly what this Bolivian coffee from the Canadian roaster Monogram Coffee tastes like. The juicy apple brings freshness, the caramel adds sweetness, and the tea-like finish pleasantly lightens the entire profile. The result is a clean, sweet, and beautifully balanced drip coffee that feels like a little afternoon break tucked into a cup.
Behind this coffee is Luis Choquehuanca, one of the original producers involved in Bolivia’s Sol de La Mañana program. His farm is located high in the mountains near Caranavi, and during his collaboration with Monogram, it has grown from a single hectare to more than seven. Luis has gradually planted new varieties, improved the health of his coffee trees, and invested in the farm’s long-term future. Monogram has been purchasing coffee from him for over seven years, and this lot consists of the Caturra variety.
The coffee undergoes a washed processing method, which brings out, above all , the purity, freshness, and natural sweetness of the beans. After harvest, the skin and pulp are removed from the cherries, and the beans are then stripped of the remaining mucilage and thoroughly washed. It is precisely this limited contact with the pulp that helps preserve a more precise and distinct flavor profile. In this Caturra, juicy apple, caramel sweetness, and a light tea-like note come through beautifully. This combination seems tailor-made for slow autumn mornings and afternoons spent under a blanket.
