Jairo Arcila Cherry from the Canadian roaster Monogram Coffee is a Colombian coffee that will win you over with its distinctive fruitiness and sweetness from the very first whiff. In the cup, you’ll find cherry cola, orange blossom, and marzipan. The cherry cola brings a combination of fruity sweetness and a pleasant sparkle; the orange blossom adds fragrance and lightness to the coffee; while the marzipan beautifully rounds out the finish.
The coffee comes from Colombia and is produced by Jairo Arcila, with whom Monogram has been collaborating for six years. This lot was grown on his Villarazo farm in the Quindío region, where Jairo focuses on both classic washed coffees and more experimental processing methods. It is precisely this combination of experience and a willingness to try new approaches that characterizes his production. Monogram particularly values his ability to create expressive coffees that have a distinctive flavor profile while retaining sweetness and clarity. Jairo thus demonstrates that experimental processing doesn’t have to mean only wild fermentation—it can also result in a very harmonious cup.
The variety is Castillo, one of the most widespread Colombian varieties, known for its stability and versatility. In this lot, however, it takes on a much more playful character thanks to the washed processing complemented by co-fermentation with cherries. It is during this controlled process that the fruity aromas are accentuated and a distinct cherry note emerges, while the washed processing helps preserve the coffee’s clarity and floral character. The entire process is carefully managed so that the result is not only intense fruitiness but also sweetness and balance.
