This natural Colombian coffee from the Polish roaster HAYB is reminiscent of a thick tropical juice, blending ripe mango, juicy pineapple, and a subtly warm note of rum. The mango brings a pronounced fruity sweetness, while the pineapple adds freshness and a gentle acidity that keeps the coffee from feeling heavy. The aftertaste gradually reveals notes of caramel and a slight alcoholic undertone that may remind you of a rum-based dessert. This coffee has a fuller, almost syrupy body and a distinct tropical character that shines best when brewed with a filter.

The coffee comes from the area around the town of Planadas in Colombia’s Tolima region, where coffee trees grow at elevations ranging from 1,500 to 2,150 meters. This lot consists of the Caturra variety, which is widespread in Colombia and often delivers a sweet and distinct flavor profile. HAYB has included this coffee in its permanent lineup, which is the result of long-term collaboration with producers. The roaster returns to these partnerships season after season, which helps it maintain consistent quality, a similar flavor profile, and coffee availability throughout most of the year. 

After harvest, the coffee cherries were processed using the natural method. This means the beans remain in contact with the fruit of the cherry for a longer period during drying, which generally results in greater sweetness, more pronounced fruitiness, and a fuller body. In this coffee, the processing is reflected primarily in flavors of ripe mango and pineapple, rich caramel sweetness, and a gently warming aftertaste reminiscent of rum. Although the flavor is intense and full-bodied, the individual notes remain clearly distinguishable, and the cup as a whole feels well-balanced.
