The coffee is balanced, with a pleasant medium acidity and velvety body, making it enjoyable both as a filter coffee and as an espresso. In short, it's a cup that combines classic Ethiopian elegance with playful sweetness.
The coffee comes from the famous Chelbesa area in the Gedeb region, which is one of the highest parts of the Gedeo zone. In this area, coffee trees are grown at an altitude of 2,150-2,200 meters above sea level and grow in the shade of local trees in nutrient-rich soil. The Chelbesa station, known for its meticulousness and emphasis on selecting perfectly ripe cherries, is responsible for processing. Local farmers grow native Ethiopian varieties, genetically rich and full of distinctive floral notes typical of this area.
This lot was processed using the red honey method, in which the coffee cherries are dried with part of the pulp after being hulled. This allows the beans to retain their natural sweetness and fruity character, which is beautifully reflected in the taste of the cup. Slower drying on raised beds also brings a delicate complexity, smooth body, and the aroma of freshly blooming flowers. The result is a coffee that tastes like a sweet summer memory, warm, fragrant, and incredibly balanced.
