This coffee comes from the Santa María de Dota area, one of the most famous parts of Costa Rica's Tarrazú region. Its story is linked to the Solis family, specifically to Ivan Solis, who runs the Ivan Solis Micromill farm. The farm is located at an altitude of 2,000 meters above sea level, where the cooler climate and rich volcanic soil allow the coffee cherries to ripen slowly and develop a rich flavor profile. The Mocca variety, rare and little cultivated, is known for its distinctive sweetness and delicate, aromatic character, which sets it apart from more common varieties.
The coffee is processed using the natural method, in which the cherries are dried whole in the sun after harvesting. This process enhances the sweetness and fullness of the cup, giving it a delicate syrupy body and deepening the fruity notes. In combination with the Mocca variety, the natural processing brings an exceptionally rich and harmonious flavor that beautifully reflects the terroir of Santa María de Dota and the careful work of Ivan Solis.
