This coffee is great proof that specialty coffee can be both complex and accessible.
The coffee beans come from the Alvarado family farm , specifically from the Brunca region in southern Costa Rica, in the town of Vista de Rivas below Mount Chirripó. This area was previously known more for growing tomatoes and raising cattle than for high-quality coffee. However, the Alvarado family decided to go against the grain —they took advantage of the fertile soil and high altitude and began growing specialty coffee. Today , the farm is run by three Alvarado sisters, who have earned respect beyond their community thanks to their attention to detail and quality processing. Their work is so precise that they have become one of the most respected producers in the region. Each harvest is the result of determination, careful manual labor, and a deep relationship with the land they cultivate.
The coffee is processed using the dry method, with special emphasis on selecting the ripest cherries. After harvesting, the fruits go through a floating system, which helps separate defective or unripe cherries. The cleaned cherries then rest for 50 hours in a mountain environment, which helps stabilize fermentation. They are then spread out in thin layers on greenhouse-covered terraces, where they dry for 20-25 days, depending on the weather. This careful natural drying process allows the beans to absorb the maximum flavor and sugars from the pulp, resulting in a cup with a distinctive, sweet, and fruity profile that stands out beautifully when filtered.
