The celebration of Industry’s fifth anniversary begins with the very first whiff! To mark the occasion, this roastery has prepared a special Colombian Geisha in collaboration with Chicas. This Geisha will enchant you with its distinctive jasmine aroma , which hints at a truly intriguing flavor experience ahead. It continues with the juicy taste of ripe nectarines and blackberries. This fruity freshness is pleasantly complemented by a delicate honeyed sweetness, which gives the coffee a beautifully balanced character while allowing each flavor component to shine. You can savor this fresh, fragrant coffee, full of floral and fruity notes, sip by sip—even if it’s not your birthday.
The coffee beans come from the family-run La Cabaña farm, located in the Bruselas area of Colombia’s Huila region. Here, the rare Geisha variety is grown, known primarily for its distinctive floral aroma and delicate flavor profile. The farm is run by the Ortiz family, whose history has been intertwined with coffee cultivation for three generations. The family moved to this area around 1965 and has been farming on the current farm since 2009. Today, Libardo Ortiz, his sons William and Julian, and other family members work together to care for the farm. William, in particular, has been actively educating himself in the field of specialty coffee since he was fifteen and is constantly seeking new ways to further enhance its quality.
The coffee is processed using the classic dry, or natural, method. In this method, the whole coffee cherries—including the pulp—are dried, so the beans remain in contact with the fruit’s pulp throughout the drying process, which enhances their natural sweetness, fuller body, and more pronounced fruity character. The entire process requires careful monitoring, as the proper drying process is essential for preserving a clean and balanced flavor profile. In the case of this Colombian Geisha, the variety’s floral character is beautifully complemented by the more pronounced fruitiness and pleasant sweetness typical of natural processing. Furthermore, William Ortiz has long been dedicated to refining fermentation processes and seeking methods that can draw out the maximum flavor potential from individual varieties.
