The coffee comes from the Wiwitz farm in the Huehuetenango region of Guatemala, where it is grown by Juan Rodriguez and his wife. Both learned how to grow coffee plants from their parents and later acquired their own farm, which they built practically from the ground up. After purchasing the land, they established their own nursery to grow seedlings and subsequently planted the young coffee trees directly on the farm. For this lot, Juan used the Caturra variety, which is very widespread in Guatemala and offers a beautifully balanced flavor profile in the cup.
Juan Rodriguez processes these beans using the washed method. He removes the pulp from the coffee cherries on the day of harvest and then allows the beans to ferment for approximately 24 to 32 hours. He then soaks the beans again in clean water, this time for another 12 hours. Finally, he spreads them out on a terrace, where they dry for about three days. The washed processing helps preserve the clarity and brightness of the resulting cup, while the slow drying allows its sweet character to develop.
