The renowned Dutch roaster DAK Coffee Roasters celebrates its presence in the world of specialty coffee with another playful and eye-catching coffee, Sprinkles. Like other editions from DAK, this coffee is bold and full of distinctive flavors that you would not expect from a regular filter coffee. The cup reveals a combination of sweet and slightly nostalgic tones, where juicy pineapple juice, delicate yogurt acidity, and candy-like sweets dance side by side. You can expect a slightly unusual experience that will delight you with its balance and depth.
This coffee comes from the Finca Anaya farm in the Huila region of Colombia, an area that, thanks to its geography, has ideal conditions for growing high-quality Arabica. The farm is located at higher altitudes of around 1,600 meters above sea level, where the combination of cooler nights and sunny days helps the cherries to ripen slowly and develop the complex profiles they conceal. DAK selects lots with regard to ethics and flavor profile, which is why this coffee represents the best Huila has to offer.
The processing of this coffee combines anaerobic fermentation with yeast inoculation. After careful harvesting, the whole coffee cherries are sealed in fermentation vessels without oxygen access, where they ferment under controlled conditions with the addition of selected yeast strains. These help to keep the fermentation process stable and predictable and to bring out the hidden tones. After fermentation, the cherries are dried, most often on African beds with continuous turning to prevent inaccuracies and preserve the flavor of the coffee. The result is a coffee with a fuller body, distinctive aroma, and clearly discernible flavor profile that reflects what makes DAK so unique.
