Chocolate, spices, and herbs all in one cup? Colombia Incorporate Washed from the Czech roaster Krok shows that even seemingly simple flavors can create an interesting combination. The main flavor is mild milk chocolate, accompanied by pleasant spicy notes and a light hint of herbs. The result is a harmonious—but definitely not monotonous—flavor profile. The chocolate base lends the coffee a pleasant sweetness, while the spices and herbs give it a distinctive character. This Colombian coffee is a great choice for anyone who wants to enjoy filter coffee with a slightly different twist, without pronounced fruity notes.
Behind this coffee is Incorporate Colombian Coffee, a family-run project based in the Colombian department of Quindío. Its story began with César Díaz’s father, who passed on his passion for growing and processing coffee to his sons. Today, Incorporate operates as a processing center that connects farmers from various parts of Colombia. Every day, freshly harvested coffee cherries arrive here from their own farms as well as from other growers. This particular lot comes from the Tolima and Valle del Cauca regions and is the result of a collaboration among local producers.
The coffee consists of the Colombia and Castillo varieties and has undergone washed processing. In this method, the skin and pulp are removed from the coffee cherries, followed by the remaining mucilage layer surrounding the beans. The beans are then washed and dried to the desired moisture content. The washed processing method generally promotes a cleaner and more distinct flavor profile and allows the coffee’s natural character to shine through more clearly.
