The Krok roastery in Jičín is introducing a new coffee from the Colombian company Incorporate—this time, a naturally processed Bourbon Ají variety for espresso. In the cup, you’ll find a distinctive fruity character that’s pleasantly complemented by a subtly bitter cocoa finish. Juicy notes of red fruit create an interesting contrast with the coffee’s fuller body, delivering a flavor experience where fruity freshness naturally blends with deeper cocoa notes.
The coffee comes from the Colombian growing regions of Tolima and Valle del Cauca, with production and export managed by Incorporate Colombian Coffee. The company was founded in the department of Quindío by César Díaz’s father, and his sons continue the family tradition today. Incorporate serves as a processing center for local farmers, providing them with the necessary infrastructure and expertise to achieve premium quality. It places particular emphasis on traceability, fair prices, and long-term support for growers, whose coffee it helps bring to the international market.
This lot consists of the less common Bourbon Ají variety, which, despite its name, is genetically more closely related to Ethiopian varieties than to the classic Bourbon. The coffee underwent natural processing with two-phase fermentation. After selective hand-picking and sorting, the cherries undergo 20 hours of aerobic oxidation followed by another 100 hours of anaerobic fermentation in sealed tanks containing water and yeast. The cherries are then slowly dried on raised screens until their moisture content reaches 10–11%.
