This year, Amsterdam-based roaster DAK Coffee Roasters has prepared Panettone Christmas coffee, which will transport you straight to a warm festive evening with the very first sip. This limited edition will surprise you with the sweetness of orange cake, the subtle spiciness of cardamom, and the sparkling sweetness of pearl sugar. The result is a velvety smooth, aromatic cup that will be a pleasant embrace on every winter morning.
To find the origin of this festive lot, we travel to the Colombian region of Risaralda, where the Finca Milan farm is located. The local farming team is dedicated to growing the Caturra variety at an altitude ofaround 1,400 meters above sea level, where coffee trees thrive in an ideal climate. Finca Milan is known for its emphasis on innovative processing and deep respect for nature and the soil, which produces beans with a unique character.
The processing method for this festive coffee is truly special. Panettone is the result of a precise co-fermentation process, in which freshly harvested coffee cherries were fermented together with orange and cardamom. This approach allows the beans to absorb delicate fruity and spicy tones, which later blossom in the cup. The coffee was then processed using the Honey method – that is, hulled, but with part of the pulp left on during drying. This helped to emphasize its natural sweetness and smoothness. The result is a richly layered flavor profile that combines joy, warmth, and elegance – exactly what you expect from a festive coffee.
