The beans come from the Matagalpa region and the Los Placeres farm , run by the renowned Mierisch family – a name that in Nicaragua stands for more than a century of tradition and top-quality care. Los Placeres is also the family's oldest and largest farm: part of the land is designated as a protected area, and the farm also serves as a testing ground for rare varieties, such as Ethiosar, which you will find in this lot. The terroir at an altitude of approximately 750–970 meters above sea level gives the coffee a specific sweetness and juiciness, while careful selection of cherries and consistent sorting keep the cup clean and consistent. The combination of a progressive approach with respect for nature and the community is evident in every batch – nothing here happens by chance.
The processing is funky natural with anaerobic fermentation: freshly picked cherries are sorted and sealed in containers with limited oxygen access, where controlled fermentation takes place, highlighting the fruity esters and winey, "grapey" notes. This is followed by slow drying of the whole cherries on raised beds, regular turning, and careful control of temperature and air flow to develop sweetness without unwanted tones. The result is concentrated, juicy fruit in the cup, supported by a smooth body and a refreshing mint finish – exactly the kind of natural coffee that delights with its unrestrained character without losing its purity.
