The coffee comes from the Jaltenango region in Chiapas, Mexico, and is produced by the group of women farmers known as La Tribu. The Bean Voyage initiative collaborates on this project, helping the women develop their microfarms through education, technology, and fairer market access. The collaboration focuses not only on purchasing the harvest but also on long-term improvements to the conditions under which the women farmers grow and process their coffee. Thanks to a transparent system, this lot has a clearly traceable origin, and purchasing it also supports the development of the local community.
The most technologically interesting part of the processing is decaffeination using the Mountain Water Process, which the beans underwent in the city of Veracruz. This method uses only pure glacial water—without any chemical solvents—to remove the caffeine. This gentle process helps preserve the natural complexity, sweetness, and purity of flavor that could easily be lost with less careful processing. The result is a cup with a delicate citrus freshness and a sweet chocolate finish. After Hours thus demonstrates that even decaffeinated coffee can possess the sparkle, complexity, and character of a high-quality specialty lot.
