The Aljiri cooperative was founded in 2022 in the Collasuyo region of Caranavi province, at an elevation of around 1, 530 meters, surrounded by the Andes and abundant water sources. This region alone produces 95% of all Bolivian coffee. The cooperative consists of 19 families who are behind the Matriarcas: Un Café con Igualdad project, which aims to increase women’s involvement in farm management and ensure a fair distribution of profits. The farmers strictly avoid chemical fertilizers and pesticides, maintain soil fertility with natural fertilizer made from coffee husks, and intentionally preserve native forests on their land to protect local biodiversity. Harvesting is done exclusively by hand and only when the cherries reach optimal ripeness.
This lot is a blend of the Typica, Red Catuai, and Catuai varieties, processed using the traditional washed method. After being hand-picked and hulled, the beans are first fermented in open tanks, which develops their distinctive fruity character. The beans are then thoroughly washed with pure mountain water to remove any remaining pulp and finally dried slowly on covered drying beds for 2 weeks, ensuring flavor stability. When brewed as a filter coffee, its juicy texture stands out, with notes of gooseberry and elderflower, complemented by a long finish of cocoa and macadamia nuts, while as an espresso, it is dominated by the deep sweetness of caramel and molasses, supported by the acidity of red currants and intense apricot aromas.
