The coffee comes from the Inzá area in Colombia’s Cauca region, where it is grown at an elevation of 1,700 to 2,100 meters by small-scale producers united in the Asorcafe association. Founded in 2003 in the town of Pedregal, the association now brings together 290 growers. Together with its export partner, Siruma Coffee, the association assists the growers with organization, training, and sensory evaluation of their own production. The name “Suukala” means “sugar” in the Wayuu language and refers to washed lots rated at least 85 points that stand out for their clarity and complex sweetness.
The washed process allows this coffee to showcase its natural freshness and clean flavor profile. After the outer husk is removed, the beans are fermented, then carefully washed in clean water and sorted. Slow sun-drying then ensures a perfectly clean profile that allows the delicate notes to fully shine through.
