Honduras Caballero El Pantanal from Kokko Coffee Roasters is a fresh and elegant filter coffee that combines notes of orange, red apple, and honeysuckle. The fruity sweetness of red apple blends with the citrusy juiciness of orange and the delicate floral character of honeysuckle. The result is a clean and light cup with pleasant freshness and well-balanced sweetness. The coffee is very approachable, yet offers enough complexity to remain enjoyable even when sipped slowly.

The coffee comes from Honduras, specifically the Marcala region, which is one of the most significant areas for Honduran specialty coffee. El Pantanal is located at an elevation of 1,530 meters above sea level—a location that promotes slower ripening of coffee cherries and the development of more pronounced acidity, sweetness, and more complex fruity and floral notes. The producers are Marysabel Caballero and Moises Herrera, who are among Honduras’s most respected growers. Kokko Coffee Roasters from Stavanger, Norway, handles the roasting. Kokko combines a roastery with a café, architecture, and design, and relies primarily on repeated cupping when developing roast profiles. For each coffee, they take into account its variety, processing method, origin, and altitude to best bring out its natural characteristics.

El Pantanal is made from the Catuai variety and processed using the washed method. This process removes the pulp from the beans and primarily enhances clarity, a well-defined flavor profile, and a more pronounced fruity acidity. The combination of high altitude, the Catuai variety, and washed processing gives the coffee a very clean and precise character. A light, juicy, and florally sweet coffee that showcases the fresh side of Honduran specialty coffee.
